CocoaT Cooling Tray Macro
CocoaT commercial Cooling Tray Macro is designed to cool 10kgs of cocoa beans in about 5 minutes. It effectively arrests the roasting to preserve the desired flavor from the beans. Cooling Tray system prevents the beans from over-roasting (after removing from the roaster/heat source) from residual heat due to high fat content in the cocoa beans (cacau beans, cacao beans).
The unit comes with blower, bottom tray and top tray. All food contact areas are made with high quality stainless steel for elegance, durability and cleanability. Most of the components are made of stainless steel. Top tray doubles as collection tray to collect roasted beans from the roaster.
Once the roasting is done, open the CocoaT commercial Roaster door and remove the dust collection tray at the bottom of the CocoaT commercial Roaster. Place the top tray in its place. Release the latch in the roaster drum. Let the drum rotate couple of times at no heat setting. All the beans fall in to the top collection tray. Remove the tray from the roaster and place it on the cooling mechanism and switch on the power. Beans are cooled in less than 5 minutes.
